TOFFEE BARS

  • 1/2 cup margarine
  • 1/2 cup sugar
  • 1/4 teaspoon salt
  • 1 cup all purpose flour
  • 1 14 oz. can sweetened condensed milk
  • 2 tablespoons margarine
  • 2 teaspoons vanilla
  • 1 bag of Hershey's Milk chocolate chips
  • 3/4 cup finely chopped pecans

In a mixing bowl beat 1/2 cup margarine, the sugar and salt with an electric mixer on medium to high speed till thoroughly combined. Slowly add flour on low speed till it looks like pie crust. Press in the bottomed of an ungreased 19 x 9 x 2 inch baking pan. Bake in a 350 degree oven about 10 minutes or until edges are lightly browned.

In a heavy saucepan heat condensed milk and the two tablespoons margarine over medium heat until bubbly, stirring constantly. Cook and stir for 5 minutes more. (Mixture will thicken and become smooth.) Stir in the 2 teaspoons vanilla. Spread over baked layer. Put back in the oven for 12 to 15 minutes longer or until golden. (It needs to be watched closely as it browns fast.)

When the pan is removed from the oven for the second time, sprinkle the milk chocolate chips over the hot bars. Wait two minutes more, and then swirl with a spatula till the entire top is covered with the melted chips. Sprinkle with the chopped nuts. Chill for 5 or 10 minutes till chocolate layer is set. Cut into bars. Makes at least 36.
