SOUTH DAKOTA POTATO SALAD
A recipe from the Olive Crest United Methodist Women's Cookbook (1985)
- 5 lbs. Red potatoes
- 10 eggs
- 2 c. Kraft mayonnaise
- 5 tsp. prepared mustard
- 1 tsp. salt
- 1 1/2 tsp. Accent
- 3 T. vinegar (white)
- 3 T. sugar
- 1 medium-sized onion, cut very fine
Boil potatoes in water with 1 1/2 teaspoon salt and 3/4 teaspoon Accent until done.
Let cool and dice in small pieces. Boil 10 eggs for 15 minutes. Peel and cool.
Dice in small pieces except 2 or 3 to slice and garnish. Mix dressing thoroughly.
Then put in diced potatoes, onions, and diced eggs. This would serve 12 to 15.
